Ingredients
1 cup cottage cheese
2 large eggs
1/2 cup milk
1/4 cup honey
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup blueberries (optional)
Instructions
1. Preheat the oven to 350°F and line a muffin tin.
2. Blend cottage cheese, eggs, milk, and honey until smooth.
3. In a bowl, combine flour, baking powder, baking soda, and salt.
4. Add wet ingredients to dry and mix until just combined.
5. Fold in blueberries if using.
6. Spoon batter into muffin liners.
7. Bake for 18-20 minutes until golden.
8. Cool on a wire rack and serve.
