Ingredients
1 large head of romaine lettuce, chopped
1/2 cup grated Parmesan cheese
1 cup gluten-free croutons (or roasted chickpeas)
2 egg yolks
2 tablespoons lemon juice
1 teaspoon Dijon mustard (gluten-free)
2 teaspoons anchovy paste
1 garlic clove, minced
1/2 cup olive oil
Salt and pepper to taste
Instructions
1. In a large bowl, whisk together egg yolks, lemon juice, Dijon mustard, anchovy paste, and minced garlic until combined.
2. Slowly drizzle in olive oil while whisking continuously to create a creamy emulsion.
3. Season dressing with salt and pepper.
4. Add chopped romaine lettuce to a large salad bowl.
5. Pour the dressing over the lettuce and toss gently to coat.
6. Sprinkle grated Parmesan cheese over the salad.
7. Top with gluten-free croutons or roasted chickpeas.
8. Serve immediately with extra lemon wedges if desired.
