Recreate the classic Smothered Burrito at Taco Bell with this easy homemade recipe.
Ingredients
1 large flour tortilla
1 cup shredded chicken or ground beef
1/2 cup cooked Latin rice
1/2 cup refried beans
2 tablespoons chipotle sauce
1 cup red enchilada sauce
1/2 cup shredded cheese blend
2 tablespoons sour cream
Chopped green onions (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. Fill the tortilla with chicken, rice, beans, and chipotle sauce.
3. Roll the burrito tightly and place it seam-side down in a baking dish.
4. Pour enchilada sauce generously over the burrito.
5. Top with shredded cheese.
6. Bake for 15-20 minutes until cheese is melted and bubbly.
7. Remove from the oven, top with sour cream and green onions.
8. Serve immediately with a fork and knife.
Notes
Use store-bought enchilada sauce for convenience.
Swap chicken for steak or ground beef as preferred.
Add jalapeños or hot sauce for extra heat.
Serve with a side of guacamole or salsa.
